Ingredients
Base
3 scoops Vanilla Life Shake - Click here to grab yours
1 1/2 Cups almond meal
1 tbs Coconut oil
1/4 cup water
Pinch of sea salt
1 egg ( If making a vegan version replace egg with another tbs of coconut oil)
Centre
1 cup Peanut butter
2 tbs Cacao Butter
3/4 cup chopped nuts. I used almonds but pick your favourite or do a mix.
Topping

(If you're not a Cacao addict like me and don't have it in the cupboard 95% Dark choc works well as a direct replacement)
I tbs Coconut oil
Crushed rock salt
Method
Preheat oven to 180 degrees celsius and line a 25cm by 15cm baking tin with baking paper.
Put base ingredients in a high speed blender and blend till well combined. The Mixture should hold together when balled.
Press the base mixture into the tin and bake for 15 minutes. (It should just be going brown around the edges. Once baked, set aside to cool.
In a sauce pan heat peanut butter and cacao butter on a gentle heat. Whisk gently until cacao butter is combined with the peanut butter and the mixture is runny.
Roughly chop nuts
Pour the peanut butter mixture over the biscuit base and then sprinkle nuts evenly over the peanut butter mixture. Pop in the freezer to chill for 30 minutes.
Once the slice has chilled for 30 minutes - Melt Cacao and coconut oil over a double boiler until well combined and runny. Leave to cool for 10 minutes and then pour of the slice.
Chill in the freezer for 4 hrs and then sprinkle crushed Rock salt on top. Slice into even portions and keep in a sealed container in the fridge.
